"Meat Free Monday" Cooking Show!




Our most-recent episode of the cooking show featured recipes from Paul McCartney's Meat Free Monday cookbook.

We always try to have some type of theme to our shows.  Most of the time I play it safe and go with a seasonal theme; sometimes my cooking guest(s) will offer suggestions.

This time, however, I opted to go the surprise route.  My friend, Maribeth, was cooking with me and I happen to know that she adores Paul McCartney.  I thought I would surprise her by preparing recipes from his cookbook.

Cooking Show: Shrimp Francese and S'mores Ice Cream

I can't be the only one who feels like this summer flew by.  Happy Fall!

We filmed an episode of the cooking show last week, and decided to feature a couple of recipes that will help ease our transition into fall before we are surrounded by pumpkin spice EVERYTHING.

Not that pumpkin spice is a bad thing, it's just that I usually spend the entire month of September in denial...and lemon-infused Shrimp Francese over linguine and S'mores ice cream loaded with toasted marshmallows and graham crackers are high-octane fuel for denial!

My friends, Kerry and Kelly, assisted me.  We were in agreement that the following recipes are keepers!



Incredibly fresh-tasting thanks to the lemony sauce.  Absolutely delicious if I do say so myself!


The camera crew and Kerry, Kelly and I devoured every last bite, leaving just a tiny bit of room for dessert.



Seriously, if you have an ice cream maker and you love to make homemade ice cream, you have to give this a whirl!

It only takes two minutes to toast the marshmallows in your oven, and they are the key to this amazing concoction.  Can you tell by looking at this picture how perfect they are?  Crunchy-toasty on the outside, still soft and chewy on the inside.


Yes, we devoured every last bit of this as well!

Cooking Show: Tailgating, Part IV



My friend, Maureen, joined me for our most recent cooking show. We prepared a few dishes that are fun to dig into when you're watching the game at home, or easy to transport if you're heading out to the stadium!

It's been a few years since we last filmed a show featuring tailgating recipes.  It's only right that Maureen has been by my side for each of those shows! 

It was my pleasure to join her again recently as she packed up her minivan with provisions for pre- and post-game feasts for her family and assorted guests.









You would think that the many bowls of toppings in this picture means that there is a lot of prep involved.

We've kept the prep to a minimum.  Use a rotisserie chicken and pre-made pico de gallo to cut down on prep time!

Let your guests assemble their own tortillas with their choice of fillings.


Or create your own salad bowls with your custom choice of ingredients!


Another recipe with minimal prep!  Buy frozen roasted corn, mix in a few additional ingredients...that's it!


I wish I had thought to take a photo of these sliders in all their ooey-gooey goodness! They are soooo good...and disappear faster than you could possibly imagine...like you think that maybe everyone will have ONE but when you're cleaning up the empty pan you realize that next time you need to allow THREE per person.  They are THAT GOOD!!!




If you like carrot cake, and you like whoopie pies...give these a try!

Berries with Limoncello and mint...no written recipe needed!  Just fill a bowl with assorted berries, stir in some WOW with about 1/4 cup of limoncello, and sprinkle some chopped fresh mint on top.

Cooking Show: Summer Produce

Our recent cooking show focused on summer produce.


More specifically, recipes to make if you have an overabundance of summer produce!

My friend, Lisa, cooked with me. Lisa loves to cook as much as I do!  It didn't take long before our assortment of seasonal fruits and vegetables turned into a mouth-watering array of delicious dishes.

If your garden is overflowing with eggplant, then this is the recipe for you!

My husband did not grow up in a house where eggplant was served and he has a very strong aversion to unfamiliar foods.  He does not even like the word "eggplant."  However, his absolute favorite dishes are chicken parmesan and veal parmesan.  I knew he would like this if only he would try it!  

The first few times I served him eggplant, he ate it without complaint and grudgingly said, "I guess I would eat anything if it had enough tomato sauce and cheese on it."  

I would be kidding myself if I said that this is now one of his favorite foods, but I do know that he really likes it!  


Okay, maybe you don't have watermelon growing in your garden. Watermelon is one of my favorite summer fruits, and it only seemed right that while it's in season and at its peak we should feature this drink!

Heirloom Tomato Caprese Salad

Here you go: heirloom tomatoes, fresh mozzarella, balsamic glaze, basil.

Got that? Four ingredients!  Slice the tomatoes and mozzarella, drizzle it with balsamic glaze and sprinkle with finely shredded basil.  SO GOOD.  Excuse my shouting.  But it's SO GOOD.  Is there anything better than fresh-sweet-heirloom tomatoes in the summertime?  I think not.


If you are lucky and have an overabundance of zucchini and blueberries on hand you can make this today.

If not, go to your supermarket and get yourself a small zucchini and a half pint of blueberries so you can make it today.

I can not tell you how long this bread will stay fresh because in this house it is always devoured within 24 hours.  The last three times that I made this bread I shared it with three different people and all of them asked me for the recipe.  It's that good!  No matter how often I make it (even three times in one week), it disappears fast.

New Recipes for the New Year

Happy New Year!

The idea for our latest cooking show was sparked during a recent trip to the supermarket.  Another shopper noticed the spaghetti squash in my cart and started asking questions:

"Is that a spaghetti squash? What are you going to make? How do you cook it?"

It only took me a few minutes to answer her questions.  It was her final comment that caused the rusty gears in my head to start turning: "It sounds easy enough.  I guess I just need to branch out and try new things."

Hmmm, I thought to myself, the next cooking show could revolve around that theme.  We all get stuck in a rut now and then.

Maybe you've never cooked spaghetti squash before, or maybe you're looking for a twist to your usual prep methods --like baking slices of eggplant parm individually, instead of frying and layering them casserole-style. My friend, Joanie, joined me for this show.  At the end of the night she declared, "I think I may have found my new go-to recipe for eggplant parm!"


It seemed fitting that we should pop open a bottle of bubbly to toast 2018! We added a handful of fresh raspberries and a few spoonfuls of vanilla ice cream to create Bubbly Raspberry Cocktails. Mmmmm.

We jumped right into preparing our first dish.  We made our sauce while the spaghetti squash was roasting, and then shredded the squash and served it right in the shells.

We were already digging in and filling our plates when I suddenly remembered that I needed to snap a few photos for this blog. Instead of asking everyone to freeze what they were doing so that I could grab my DSLR camera to try and take photos, I made do with my iPhone. On my best day, I take horrendous photos. THESE photos, however...yikes.  Please accept my apologies!}}



There is so much going on here.   Sautéed chicken cutlets, bow tie pasta, wild mushrooms.  The mushroom/wine sauce is heavenly...and crumbling crispy pancetta on top sends over the top!

Baked Eggplant Parmesan

Skip the frying and layering.  This recipe for eggplant parm is quick compared to the traditional method, and this platter was the one that was empty at the end of our cooking session!

Cooking Show: Crock Pot Favorites, and Baileys® Irish Creme Parfaits

Last week's cooking show featured an eclectic assortment of recipes.

I started planning a theme featuring favorite recipes for the slow cooker.


This is my personal favorite, as far as slow cooker recipes go.  The only prep is chopping a few ingredients and opening a few cans, then mixing it all in your crock pot and forgetting about it for 8 hours.  No additional steps, just add a few toppings at the end.  Truly a one-pot meal! 


And it's not a grease-laden chili, as you will use steak instead of traditional hamburger.  Here's the printable recipe.

Chicken Orzo Soup with Fennel & Kale















Soup's on!

One more reason to be happy that cooler fall weather has finally arrived.  It makes me so happy to finally be able to simmer a pot of soup on the stove and not turn my kitchen into a steam bath, so I took a break from all the pumpkin recipes I've been trying out lately and made this soup!

I switched out a few ingredients from my usual chicken soup recipe, but if you're not feeling adventurous, go the traditional route and switch out the orzo for traditional noodles and use celery instead of fennel.

Chicken Orzo Soup with Fennel & Kale
  • 2 stalks fennel, chopped
  • 1 medium onion, chopped
  • 4 cloves garlic, crushed
  • 2 large or 3 small carrots, chopped
  • 1 tablespoon olive oil
  • 2 cups chopped cooked chicken
  • 1 bay leaf
  • 1 teaspoon dried rosemary
  • 8 cups chicken broth
  • 2/3 cup uncooked orzo
  • 3 cups chopped kale
  • salt & pepper, to taste


Gather your ingredients.

Chop the carrots, onion and fennel.  I pulled off a few of the fennel fronds and set them aside to use a garnish when serving.

In a large (6 to 8 quart) pot, heat the olive oil over medium/high heat.  Add the fennel, carrots and onions.  Crush in the garlic.  Add salt and pepper.  Saute the vegetables, stirring occasionally, until they start to soften and get a little bit of color on the bottom of the pan.

Add the cooked chicken, bay leaf, rosemary and chicken broth.  Bring to a boil, then reduce the heat to a simmer.  Allow the soup to simmer for 15 minutes.  Add the orzo and simmer for an additional 10 to 15 minutes, until the orzo is cooked.  Finally, remove the bay leaf, add the chopped kale and simmer for 10 more minutes.

Season with additional salt and pepper if needed.

Oven-Roasted Spiced Sweet Potatoes

If you're looking for an easy recipe for a spectacular side dish, look no further!!








I'll sum up this recipe for you in one sentence: wash, peel and dice a sweet potato, stir with olive oil, cumin and paprika and bake for 25 minutes at 425 degrees.

How do they taste, you ask?

Out of this world. To-die-for. 

Yes, they are that good.

Don't just take my word for it.  Make some today!!

Oven-Roasted Spiced Sweet Potatoes (4 servings)

  • 1 large or 2 small sweet potatoes, cut into 3/4" cubes
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt


Gather your ingredients.  Preheat your oven to 425 degrees Fahrenheit.  Line a large (10" x 15") baking sheet with parchment.

Wash and peel your sweet potato.  Cut it into 3/4-inch cubes.  You should have about 3 cups of cubes.


Place the cubed sweet potatoes into a medium bowl and drizzle with the olive oil.  Stir to coat the potatoes with the oil.

Combine the cumin, paprika and salt in a small bowl.  Sprinkle over the sweet potatoes.  Stir to coat the potatoes with the spices.

Spread the potatoes into a single layer on your parchment-lined baking sheet.  Roast the potatoes for 25 minutes, until tender and easily pierced with a toothpick.

Grilled Eggplant Caprese Stacks

There is just so much to love about summer! ( I really wanted to type that in all caps, but I didn't want to shout at you.  Well, I do want to shout it.  But I didn't want to hurt your eyes.  Tell me you understand what I'm saying and that I'm really not just babbling.)

Here's just ONE thing I love about summer:

Caprese Eggplant Stacks!!

You could make these any time of year, but they are especially good in the summer with fresh-picked tomatoes. If those fresh-picked tomatoes happen to be heirloom tomatoes...well, let's just say that if you happen upon a bin of local heirloom tomatoes at your supermarket--or better yet, at a local farmers market--don't pass them by!

Grilled Eggplant Caprese Stacks (yields 8 to 12 stacks)
  • 1 large or 2 small Italian eggplants
  • olive oil, for brushing the eggplant
  • 4 heirloom tomatoes, sliced
  • 8 oz. ball of fresh mozzarella, sliced
  • 1/2 cup of your favorite pesto
  • coarse or flaked sea salt (Maldon sea salt flakes are perfect)
  • balsamic vinegar, for drizzling
  • 1/4 cup fresh basil leaves, cut into ribbons

Gather your ingredients.  

Use whatever type of pesto you love best, whether it's homemade or bought from a store.  I had already made my pesto in advance.  If you want to make homemade pesto,  Click here for my recipe.  

Prep your ingredients--slice the tomatoes, mozzarella and eggplant into slices about 1/4" thick.

Roll up the basil leaves and slice them into ribbons.

Grill the eggplant:  brush both sides of the eggplant with olive oil. Grill about 3 to 4 minutes per side with your grill on medium/high heat.

While the first side of the eggplant is grilling, I begin assembling the stacks.

Place the largest slices of tomato on a platter.  Sprinkle with the sea salt.

Check the eggplant and flip the slices when they have visible grill marks and have started to soften slightly.

Layer a slice of mozzarella onto the tomatoes.  If you're lucky the mozzarella slices are slightly smaller in diameter than the tomato slices.

Spread a heaping teaspoon of pesto onto the mozzarella.

Place an eggplant slice onto your tomato/mozzarella stacks.  The hot eggplant will soften the mozzarella.

This is why I use Italian eggplant instead of large eggplant; the smaller size fits nicely onto our stacks instead of overwhelming them.

Place a final (small) slice of tomato on top of the eggplant.  Drizzle with balsamic vinegar.

You could also use a balsamic reduction instead of vinegar.  Your choice!

Sprinkle with the basil ribbons.

You can serve these immediately, while the eggplant is still warm, or refrigerate them and serve them cold.
