Strawberry Scones with Lemon Curd

It's been a few weeks since I made one of the gazillion recipes that I've been pinning on Pinterest.

Eenie-meanie-miney-moe...........for today's recipe I picked Strawberry Lemonade Scones by Munchkin Munchies.

The recipe says to drizzle them with prepared lemon curd.  I know, you're just. like. me.  You're thinking, "why used prepared lemon curd when I can make my own?"

I'm so glad that we think alike!

Make the lemon curd the day before you make the scones.  It's not difficult at all to make, but you need to give it time to chill before you use it, and chill time takes at least an hour.

Unless you like to get up at an ungodly hour so you can make your homemade lemon curd and give it an hour to chill and then make your homemade scones in time for breakfast.  In which case, we don't think alike at all.

Lemon-Poppy Seed Scones

This past weekend, with hurricane Irene in the forecast, my plan was to cook all day on Sunday while riding out the storm.

How does the saying go........"life is what happens when you're making other plans"......or something like that?

My plans to cook all day were dashed when the electricity went out at 11:30, but thanks to an early start I was able to cook my scones before we lost power!

This recipe is for a small batch (I didn't want to overdo it since only three of us in the house will eat scones), but you can easily double the ingredients and cut the dough into 8 wedges instead of 4.

My Favorite Scones

I apologize if two breakfast posts in a row seems a bit repetitive.........but I made these scones for breakfast this morning and thought they might be a tasty Father's Day treat if you're not up to making the Belgian Waffles I blogged about earlier this week.

I don't think I've ever met a scone I didn't like.

These are my absolute favorite.  They're a perfect combo of lemon, blueberry and cornbread.  What's not to love about that?
