Cooking Show: Shrimp Francese and S'mores Ice Cream

I can't be the only one who feels like this summer flew by.  Happy Fall!

We filmed an episode of the cooking show last week, and decided to feature a couple of recipes that will help ease our transition into fall before we are surrounded by pumpkin spice EVERYTHING.

Not that pumpkin spice is a bad thing, it's just that I usually spend the entire month of September in denial...and lemon-infused Shrimp Francese over linguine and S'mores ice cream loaded with toasted marshmallows and graham crackers are high-octane fuel for denial!

My friends, Kerry and Kelly, assisted me.  We were in agreement that the following recipes are keepers!



Incredibly fresh-tasting thanks to the lemony sauce.  Absolutely delicious if I do say so myself!


The camera crew and Kerry, Kelly and I devoured every last bite, leaving just a tiny bit of room for dessert.



Seriously, if you have an ice cream maker and you love to make homemade ice cream, you have to give this a whirl!

It only takes two minutes to toast the marshmallows in your oven, and they are the key to this amazing concoction.  Can you tell by looking at this picture how perfect they are?  Crunchy-toasty on the outside, still soft and chewy on the inside.


Yes, we devoured every last bit of this as well!

Cooking Show: Bahama Mama Drinks, Cajun Shrimp Pasta and Valentine's Day Baking


You could say that our recent cooking show was a mish-mash of recipes.  My friend, Amy cooked with me.

We were all business as we tried to wish away our winter doldrums with cajun shrimp pasta and a tropical cocktail.


We were in a party mood, however, by the time we finished cooking our desserts!  Valentine's Day is right around the corner, so we prepared a couple of recipes featuring my favorite combination: chocolate and raspberries.

Amy and I both agreed that we can't wait for this cold weather to end!  We sipped this drink with our eyes closed and imagined that we were somewhere tropical.



Just enough spice to warm you up during this cold weather! 



Amy and I made this into a heart shape to fit with our Valentine's Day theme.


Make it into any shape that you want, or leave it whatever shape the pastry happens to be, just please MAKE THIS.

It is so easy to make and it's SO GOOD!



It was impossible to decide which dessert recipe to give you so I decided to make both.  

Please don't let my horrid photography skills deter you from making this.  Ignore the ugly picture!  

After we finished filming, this dish was quickly snarfed down. Just imagine slices of buttery, pillowy soft brioche bread, crispy on the outside, with a warm center of creamy white chocolate mascarpone and sweet raspberry.

Cooking Show: Gluten-Free Pasta Party!

I've been toying with the idea of a pasta-themed cooking show for a while.  I knew that I didn't want to do a run-of-the-mill show with a basic spaghetti/meatballs/tomato sauce menu, but other than coming up with a couple of different sauces I still couldn't figure out what else I could do to make it more interesting.

Enter my friend Joanie.  She agreed to cook with me for the show, and I told her about my idea for a pasta show featuring a couple of different pasta sauces.  She replied, "and how about using pasta that isn't wheat pasta?"

Bingo!

We could prepare the sauces, and then critique the gluten-free pastas.

We paired a creamy tomato sauce with chick pea spaghetti, and soy fettucine with an alfredo sauce.

First up was the soybean pasta Alfredo with Chicken and Broccoli.

Heavy cream is a hallmark of classic Alfredo; however, I use light cream in my Alfredo sauce instead. Making this swap only sacrifices calories, not flavor!

As promised, Joanie and I offered our critique of the soy pasta.  We were happy to be in agreement!  But that's about all that we were happy about.

The positives: 1. The pasta remained firm in texture.
                        2. It only took about 2 minutes to cook the pasta 
                            
The negatives: 1. There was no flavor at all to the pasta.  It did not even retain the slightest
                            bit of salty flavor from the salted water that it was boiled in.
                         2. The pasta did not hold the sauce at all.  It slid right off and pooled on the plate.

I would not recommend soy pasta!

Next on the menu was chickpea Pasta with Creamy Tomato Sauce.

This is a very simple, quick, flavorful red sauce.  The addition of a bit of cream at the end gives it a nice, rich texture.

Once again, Joanie and I were in agreement as we critiqued the chickpea pasta.

The positives: 1. It was very flavorful!
                        2. It held the sauce very nicely.
                        3. Chickpea pasta has about 3 times as much protein as traditional pasta!

The negatives: 1. It doesn't turn entirely soft and mushy, but it does get starchy-soft on the
                             surface.  It still retains a bit of a bite...but if you prefer a true al dente pasta
                             you would probably be disappointed.

Cooking Show--Tomato Recipes

I feel like I beat this subject to death...but am I the only one who wants to skip right through winter and into summer?

I'm not even going to pretend that winter tomatoes can compare to summer tomatoes...but cooking with ingredients that remind me of summer is one way to beat the winter blues.  Bring on the tomato recipes!


So simple, yet so good!  The assorted tiny tomatoes are very sweet and flavorful, drizzled with a creamy buttermilk dressing...I can close my eyes and almost feel like summer is here.  Almost.


A couple of tablespoons of sun-dried tomatoes in the dressing provide a big punch of flavor!

Creamy Tuscan Shrimp with Pasta

Another recipe where a handful of sun-dried tomatoes add a wallop of flavor!

My friend, Trish, was cooking with me and we discussed adding a few mushrooms in...we ultimately decided against this, but next time I make this recipe I'm planning on adding some 'shrooms!



 Oatmeal Sheetcake with Caramel/Coconut Frosting

Okay, this recipe certainly departs from our tomato theme, but Dan the Awesome Cameraman is a fan of all things sweet. We haven't filmed a dessert since November and I want to keep him happy!

This dense cake is oozing with cinnamon flavor, and the caramel topping (perfectly browned by placing the frosted cake under the broiler for a minute) adds a crunchy texture.

New Recipes for the New Year

Happy New Year!

The idea for our latest cooking show was sparked during a recent trip to the supermarket.  Another shopper noticed the spaghetti squash in my cart and started asking questions:

"Is that a spaghetti squash? What are you going to make? How do you cook it?"

It only took me a few minutes to answer her questions.  It was her final comment that caused the rusty gears in my head to start turning: "It sounds easy enough.  I guess I just need to branch out and try new things."

Hmmm, I thought to myself, the next cooking show could revolve around that theme.  We all get stuck in a rut now and then.

Maybe you've never cooked spaghetti squash before, or maybe you're looking for a twist to your usual prep methods --like baking slices of eggplant parm individually, instead of frying and layering them casserole-style. My friend, Joanie, joined me for this show.  At the end of the night she declared, "I think I may have found my new go-to recipe for eggplant parm!"


It seemed fitting that we should pop open a bottle of bubbly to toast 2018! We added a handful of fresh raspberries and a few spoonfuls of vanilla ice cream to create Bubbly Raspberry Cocktails. Mmmmm.

We jumped right into preparing our first dish.  We made our sauce while the spaghetti squash was roasting, and then shredded the squash and served it right in the shells.

We were already digging in and filling our plates when I suddenly remembered that I needed to snap a few photos for this blog. Instead of asking everyone to freeze what they were doing so that I could grab my DSLR camera to try and take photos, I made do with my iPhone. On my best day, I take horrendous photos. THESE photos, however...yikes.  Please accept my apologies!}}



There is so much going on here.   Sautéed chicken cutlets, bow tie pasta, wild mushrooms.  The mushroom/wine sauce is heavenly...and crumbling crispy pancetta on top sends over the top!

Baked Eggplant Parmesan

Skip the frying and layering.  This recipe for eggplant parm is quick compared to the traditional method, and this platter was the one that was empty at the end of our cooking session!

Cooking Show: Quick Meals Before Rushing Out The Door!

The theme of our recent cooking show was a timely subject for me.


I thought that my days of rushing out the door to get to a ball field were over, but now that I'm coaching softball again I find myself trying to throw together a last-minute dinner almost every night.


I made a list of dishes that I had made over the previous few days, figuring that anything I had made while in the throes of softball season would be a good fit for this show!

We started with Mango Margaritas.

Toss some frozen mango chunks, tequila, triple sec and simple syrup into a blender, mix it up and add a lime wedge.  Done.

Next, we prepared Marinated Grilled Chicken and Pasta Salad.

Each of these recipes can be prepared in advance and pulled out of the fridge when it's dinner time.  I like to prepare a large batch of the chicken and use it throughout the week in salads, sandwiches, wraps and quesadillas.  Which brings us to ...

Rice Tortilla Quesadillas.  Which aren't really traditional quesadillas, because I don't follow any quesadilla recipe that I've ever seen.  I use leftovers!  It's a great way to pull together a quick meal while emptying out your fridge at the same time.

Since I didn't want to feature my fridge full of leftovers on the cooking show, I made these quesadillas with ingredients that I might typically have on hand.  The only sure thing that I use every time I make them is

1. Olive Oil spray, so they don't stick to the pan.

2. Rice Tortillas.  You can find them in the frozen food department at your supermarket.  They're
    really crispy, which is a huge hit with my family.  No soggy quesadillas in this house!

3.  Cheese.  It holds everything together.

We made a variety of quesadillas.  Roast Beef and Cheese. Ham, Avocado, Tomato and Cheese (my
favorite). And Cheesy Chicken Quesadillas with Spinach.

And finally, Caramel Coconut Chocolate Bark.  No baking involved!

Cooking Show: Recipes to Beat the Winter Blahs

Do you like winter weather?

The wind is howling and the snow is falling fast and furious as I type this. Depending on the source, we are expected to get anywhere from nine to eighteen inches of snow by the time this blizzard ends.

I've been cooking my share of soups, stews and crock pot meals throughout this winter...and I think it's about time to switch it up a bit. Recipes to end the February doldrums!  

And since Valentine's Day is coming up, there's a teensy bit of chocolate.  

Camera-hogging chocolate.


Okay, that's better.  We'll start at the beginning and work our way toward the chocolate finale.


Filled with chicken, mushrooms and spinach.  

Flavored with rosemary, nutmeg and lemon...the béchamel, that is.  Did I mention that the reason it's white is because of the glorious béchamel?

I'm not exaggerating, it took me 3 minutes to throw this together.  

This has been part of our dinner menu at least twice a week for the past couple of months and I have been eating it for lunch at least three times a week.  I had it for lunch today.  I will have it for lunch tomorrow.

Thanks to a brownie recipe that I found on the back of a package of Baker's chocolate, I have been making these brownies, using this recipe, for decades.  

Spreading raspberry jam onto the brownies and pouring a heavenly ganache on top takes them over the top!

Individual Braciole

There are probably as many different braciole recipes out there as there are chefs to cook them!

Different fillings, different preparation methods--adjust the fillings to suit your taste.

I keep my filling really simple--just garlic, parsley and romano cheese.  Just enough to season the beef!

If you google "braciole" you'll find lots of different variations.  I like to cut the flank steak into individual portions, which goes against the grain--pun intended, ha!--of some purists.  Others butterfly the steak so there is one huge, albeit thinner, steak to roll up.  Some people add pine nuts, additional spices, bread crumbs, sliced cheese, sausage or prosciutto.  I'm sure I left out lots of other possible additions.  Feel free to fill your braciole with whatever ingredients you like!

Lobster Macaroni & Cheese


I made this lobster mac & cheese on my last cooking show.  The theme of the show was cooking new dishes/developing recipes, and this recipe fit in with the theme because I had never tried to make lobster mac & cheese before.

And the reason why I chose this specific dish?  My friend, Trish, was cooking with me and I knew that lobster mac & cheese was one of her favorite foods.  

I didn't come up with this recipe on my own; my brother is a really good cook and he has a lobster recipe for everything so I simply asked him how to prepare lobster mac & cheese.  I only tweaked his recipe a little, using less black pepper (actually, I didn't use any, only white pepper) and adding a bit of milk to thin down the cheese sauce.  

I wish I had thought to record all of the comments that my friends made when we sat down to eat after we had finished taping.  I definitely remember one of them saying, "I just want to sit here and eat this for the rest of my life," and another one saying, "This tastes like something I would order at the best restaurant I ever went to."

Cooking Show--Trying Out New Recipes!!

Warning!  Long, rambling post right here!  But if you work your way through to the end, there will be recipes for Lemon Drop Martinis, Caesar Salad Dressing, Lobster Macaroni & Cheese, and Churros Poppers!

I promise that all of these recipes will eventually be posted with the usual step-by-step photos!  However, I have been receiving a lot of emails from viewers of the cooking show who would like to have the recipes that I prepared on the last show.  Please be warned that I'm still developing some of these recipes, and my notes will reflect some tweaks that I'm planning for the next time I prepare them!

We filmed another cooking show a couple of weeks ago.

The best way I can describe the theme would be "Attempting to prepare or develop recipes that I've never made before."

We happened upon this theme in a roundabout way.  I went out to dinner with my friend, Trish.  She ordered the house donuts for dessert, and our conversation went something like this:

Trish: Can you cook donuts?
Me: I never have, but I guess I could.  I don't deep-fry anything...it's one thing to eat them when you go somewhere and they're already prepared, but to pour all that oil into a deep-fryer...yikes.  I may as well just get a syringe and inject it directly into my thighs.
Trish: Do you have a deep fryer?
Me: Yes, I've never used it, it's sitting in my basement, unopened.
Trish: You should do a deep-frying cooking show!
Me: Only if you'll cook with me!

During the past year, I've asked her a couple of times if she would cook with me on the show, and she always said no.  I'm guessing that on this particular night, her defenses were lowered by the lemon-drop martinis that we had with dinner.  Lower defenses + joy at the thought of more deep-fried donuts in her future = YES!  If only I had figured out sooner that plying her with donuts was the key to getting her on camera.

White Lasagna (with Chicken, Mushrooms, Spinach and Rosemary)

Last month, I had to pick my daughter up from school because she had a doctor's appointment the next day.  She's an ice cream fiend, so I had some ice cream from her favorite local ice cream shop in our freezer.

It was almost midnight by the time we got home.  She was hungry and I told her that I had some of her favorite ice cream in the freezer.

She opted to have leftover white lasagna instead.

It really is that good!

Lasagna Bolognese with Bechamel


I'm just not ready for summer to end!

I'm not ready for my kids to be back at school.  It frees up a bit of my time, but what good is having extra time if they're not around to spend it with?

I guess I'll spend some of that extra time cooking.  Lasagna, for example.  I don't typically spend 2 1/2 hours cooking dinner (who does?), but when I do, this lasagna makes it worth my while!

Farmers Market-Inspired Cooking Show!

Last week, we filmed an episode of the cooking show.

All of the recipes we prepared were inspired by our local Farmers Market.

My friend Amy cooked with me.

Gayle and Sheila watched from the sidelines, and provided lots of light moments off-camera.

Like when they discussed the short-shorts that Amy's husband wore in the early 80's.  Or when they pondered hot flashes.


When we went outside to grill the zucchini and summer squash, it started to rain, so Gayle and Sheila bailed on us and ran inside.

But then they provided lots of moral support by telling us that our now-wet hair looked fabulous on the camera monitor.

They were so sincere, I actually believed them.  I just adore my sweet, supportive friends.

While it rained, Amy and I cooked up a storm of our own!  



The aforementioned Grilled Zucchini & Summer Squash.

There is no link to take you to a recipe, but it's so simple--here you go:

-Lop off the ends of four 6-inch zucchini/summer squash, and slice them lengthwise.  You should get 4 slices from each, aim for slices at least 1/4" but no more than 1/2" thick.

-In a medium bowl, whisk together 1/4 cup EACH of balsamic vinegar and olive oil, with 1/2 teaspoon garlic powder and a pinch of salt and pepper.

-Add the slices of zucchini and summer squash, and toss to coat.

-Grill on MEDIUM/HIGH, 2-3 minutes each side, just long enough to get great color and grill marks.  The squash should start to soften, yet still hold its shape.

Seared Sea Scallops with Sweet Vermouth
