Strawberry-Spinach-Bacon-Wonton Salad with Strawberry Vinaigrette

Don't you just love it when supermarket strawberries change from hard, unripe & tasteless to plump, shiny & bursting with flavor?

Or is it just me?

















Just take a look at these beauties!

Every supermarket that I've walked into over the past month seemed to have a huge display of strawberries right at the entrance.  Usually on sale.  And I bought a quart or two every time.

I've been overdoing the strawberry recipes, not least of all this incredible salad with spinach, bacon. wonton strips and a fabulous strawberry vinaigrette.  I've made it so many times in the past few weeks that I've lost count, but nobody here is complaining that I'm making it too often--a sure sign that this recipe is a keeper!

Strawberry, Spinach, Bacon & Wonton Salad
with Strawberry Vinaigrette

For the vinaigrette:

  • 1/2 cup canola or vegetable oil
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon ground mustard
  • pinch sea salt
  • 1/2 cup seedless strawberry jam
For the salad:
  • 4 cups salad greens (romaine, red leaf, green leaf lettuce--your choice)
  • 4 cups baby spinach
  • 1 1/2 cups sliced strawberries (about 10 to 12 large strawberries)
  • 4 slices thick bacon, cooked crisp and crumbled
  • 1 cup wonton strips

Gather your dressing ingredients.  Combine all of the ingredients in a small bowl.


Oil and balsamic vinegar...


...a pinch of salt and the ground mustard...

...and the strawberry jam.

Whisk to combine.


After you've made the dressing, get to work assembling your salad!


Cook and crumble the bacon.  I like to keep the bacon pieces bite-sized, about 1-inch long.  Wash and chop the greens.  Remove the stems from the strawberries and slice or cut them into bite-sized pieces.



Layer the spinach and greens into your salad dish, and top with the strawberries, bacon and wonton strips.

You can add the dressing now and toss the salad, or you can serve it onto individual plates and then drizzle the dressing on top.

  1. Fran, your salad looks fabulous! I see spring on a plate, lol. I'm going to surprise hubby with this one, but will have to cook the bacon while he is at work, or it will never make it to the salad. :)

    Hope you are almost melted up there! My daffodils are nearly ready to bloom.
