Cheesy Chicken Quesadillas with Spinach


I didn't plan very well and had to cook my chicken as I was preparing this meal.   If you're more organized than I am and prep your chicken in advance, these quesadillas are a snap to make!

 I would suggest baking a few boneless breasts in advance:
Preheat your oven to 375 degrees.

Brush a roasting pan with a teaspoon or so of olive oil.

Brush some olive oil on your chicken as well, and season with salt and pepper.

Bake for about 18 minutes, until cooked through.

Use two forks to shred the meat into tiny pieces.  Keep in your refrigerator.

Better yet, buy a rotisserie chicken and you won't have to cook the chicken yourself.  You'll only have to shred it.

Cheesy Chicken Quesadillas with spinach
Printable Recipe
  • 3 cups shredded cooked chicken
  • 1 1/2 cups shredded Monterey Jack
  • 1 1/2 cups shredded cheddar
  • 3 scallions, thinly sliced
  • 1/4 cup chopped cilantro
  • 2 teaspoons garlic powder
  • 2 cups baby spinach
  • 8 tortillas (Flour, Corn, or Rice)
  • salsa, for dipping
    olive oil (or olive oil spray)

Gather your ingredients.

Slice your scallions, chop your cilantro.

Did you know that some people have an aversion to cilantro because it tastes "soapy" to them?  They truly have a genetic predisposition to dislike cilantro.  If you are one of these people, please omit the cilantro from this recipe!  It is not my intention to give you soapy-tasting recipes.


Place the cheese, scallions, cilantro and garlic powder in a bowl.

Mix well.

Preheat a skillet to medium heat.  Drizzle a bit of olive oil into the skillet (or spray with olive oil spray).

Start layering the ingredients for your quesadillas in the skillet.

Place a tortilla, then 1/3 cup of the cheese mixture, then about 2/3 cup of shredded chicken......


....layer with about 1/2 cup of the spinach leaves, then another 1/3 cup of the cheese mixture.  Top with another tortilla, and brush some olive oil on top of the tortilla (or spray with olive oil spray).

Let it cook for about 2 minutes......

Then flip it.  Cook for another 2 minutes and it's done.

Repeat for remaining 3 quesadillas.


Cut into wedges and serve with salsa for dipping.
